Mummy, so what do you call this frying? Middle Frying?
I burst out laughing at this question my almost 10-year-old son asked me. That, and the fact that I bought white bread over the weekend in my home after maybe two months, inspired this blog post where I share areas I am happy to compromise at home here and there and embrace CONVENIENCE on this pathway of WELLNESS in a way that doesn’t exactly compromise our health. I employ a very popular rule, and I am excited to serve you this goodness this week…

My business name is CoachE’Nation, and I call my clients Citizens because… Nation. Extending that name to my online family, so hello e-Citizens hehe.
So over the weekend, we had light issues for whatever reasons. On Sundays, we fast as a family, so when it was time to break the fast, there was still no light to use my air fryer, and I desperately wanted to fry plantain for the boys as part of Sunday lunch, especially as I knew they were hungry!
Since I don’t use my generator with some of my appliances, including my air fryer, the only option was deep frying it.
Phew! Hard decision, especially as I had just done THIS blog on the dangers of deep frying. BUT also, somewhat a QUICK decision to make. Why?

So I knew that deep frying once in a while would not hurt our health. And so, I got out my frying pan, poured some of my original groundnut oil, just enough to fill the width, and diced my plantain small small. When the oil had heated up some, I put the plantain in and kept turning and turning it as the oil was shallow. I knew leaving it for long would mean a part gets burned while a part is half-fried.
I wish I took a picture, but I didn’t as I didn’t expect to blog about it.
This was why my son, shocked at seeing me frying in a pan but also seeing that this wasn’t deep frying, asked if it was middle frying. I responded that it was shallow frying and instantly thought there has to be some data about shallow frying. So I went to do my research.
Here’s what I got, and I think while you make plans to invest in an air fryer, we can still avoid deep frying while embracing other healthier cooking methods like boiling, roasting, or baking.
Shallow frying is a cooking method where food is fried in a small amount of oil, just enough to partially submerge it. You flip the food to cook it evenly, as with frying the plantain I did.
It sure is healthier as it uses less oil, so less oil absorption too, therefore reducing calorie and fat intake. Also, the lower temperature it fries at is a win-win, especially considering what happens when oil is exposed to deep-frying high temperatures (check my post here).
Also, shallow fry with healthier oils like groundnut, avocado, or olive oil as they retain more of their healthy properties at lower temperatures. They typically have a high smoke point, which means that before they start to smoke and break down, they have to be VERY HOT. So at such shallow-frying temperatures, they are safe.
Then an additional tip would be to blot excess oil from food with a paper towel after frying.
Shallow frying is definitely a better alternative for those who want to enjoy fried foods occasionally without an air fryer.

So the second story over the weekend was that on Saturday, the breakfast plan at Casa Bolaji-Olojo was pankara, but I didn’t realize my beans were getting bad. After the first two fries, I tasted it and noticed, so bye bye pankara.
I was already tired and disappointed, so I told my husband to just go and buy bread for the family abeg.
I was ready for that compromise as we don’t do a lot of white bread at home, so I let them enjoy it and went to sleep lol.
On some days, we just cannot but embrace and thank God for convenience, but we do NOT make it a way of life! So I shared all of that to drive home this point, which I threw even more light on in my book, How I lost 30kg in 4months UPDATED edition.

Confession time: I am one of the people who want to score 120 in a 100% test LOL. So when I find a challenge, I usually want to WIN it. But of course, I am learning real good and fast to extend GRACE to myself too and cut Eziaha some healthy, or do I say unhealthy slack.
I dedicate a portion in my book WELLNESS CHAMPIONS to explaining the 80-20 rule, and quite frankly, I do love the balance applying that brings to our healthy living journey.
The 80-20 rule as it applies to healthy eating simply states that we eat healthful and clean 80% of the time (and many of us need proper education and guidance on what healthy really is), and then we are allowed to be flexible some 20% of the time to eat the less-than-healthy stuff. However, the challenge here is sticking to the 20%, and I dare say even manipulating the 20% to favor you.
