Just dropped by to say ‘Thank you’ for always inspiring.

These pancakes where inspired by something I saw on your status sometime ago, coupled with what I learned from the Nourish and Flourish moms club.

I made the pancakes with Oats, eggs, tiger nut and coconut flour (gotten from the tiger nut juice I made sometime ago) and a tiny bit of baking powder and salt and overipe plantain as the sweetner.

I probably never would have thought of something like this if I never saw you do something similar. The good part is, I fried without oil on a non stick pan and it looks OK.

‘Just add water…’

I could not believe how EASY this whole thing seemed. I was visiting with my friend and I saw that she was using a store-bought pancake mix to make her pancakes. I was newly married at the time pregnant with my first son and I was amazed at how quickly she mixed and made the pancakes she was now serving me.

I was not new to making pancakes and I knew that there was a PROCESS to it, which was beyond ‘just add water’. Thankfully, I didn’t even enjoy the pancakes and I had no desire to switch from my own process to ‘just add water’. I was not even a Health Coach at the time and didn’t necessarily follow a clean diet, but it tasted rubbery and fake to me so I didn’t go with that flow.

Fast forward many years later and now a mom of two boys, running a home where we make pancakes at least 2-3 times a week, I can boldly tell you that there is a safer, healthier and yummier way to enjoy your pancakes.

My friend sent me this message over the weekend and it inspired this post. I was SO thrilled to read this because this is my GOAL!

Goodbye to store bought pancake mixes for one more family!

I know the labels on these food packages like the pancake mix and all promise all kinds of stuff like ‘ easy-to-make, convenient, no artificial flavor, color, preservatives, light and fluffy, all natural flavors, etx’ but believe me when I say that many of these labels and other marketing efforts intentionally deceive even those who should know better.

So now, you wanna eat pancakes… here’s my healthy recipe which completely excludes white flour which again is not the healthiest

Flour I use mostly would be oats and tigernut flour (more oats than tigernut), eggs (add 1-2 more than you would with white flour cos of the absence of gluten in these flours which acts as a binder and is present in white flour), sweetener like overripe banana or plantain like my friend, a little baking powder, and tigernut milk (optional but makes it more yummy).

I typically mix all in a blender instead of just stirring and fry with minimal to zero oil.

Healthy. Yummy. And packing nutrients!

Best of all, you KNOW what is inside because you made it yourself!

You’ll most likely struggle a few times at the beginning as MOST things are at the start so the trick is start with small portions and as you get better and confident, increase portions. Just never give up and go back to store bought which may seem convenient on the long run but would most likely be inconvenient in the long run when the health issues come up!

These store bought pancake mixes, MOST are sugar-laden, can’t be FREE of preservatives (HOW PLEASE?!?!?!!? what with the shelf life it has) and have other unhealthy additives, never mind that they are made from white flour.

I know we grew up thinking we needed white flour as a staple at home for almost everything we needed to bake or fry but really, we don’t. It’s not the healthiest flour and the good thing is that alternative exists so we can skip it completely or keep it really minimal. White flour can’t be found in my home yet I bake a lot!

In Chapter 2 of my book WELLNESS CHAMPIONS titled ‘without preservatives, real food spoils quickly’, I let us know the RED FLAGS to look out for in any packaged food and trust me, MOST store bought pancake mixes are a HUGE red flag. This book is for Kids AND adults so don’t think it’s only a kids’ book!

Its safest when you make and eat your own food. And it is A-OK if it takes more time to prep than ‘…just add water…’

Gideon told the angel to wait because he knew prepping that offering (food) will take some goooooood time. And he went and took all the time to prep from scratch. And the angel waited. So go right ahead and invest that time. Everyone who’s serious will wait! Including you!
